Pizza

This is off the top of my head and the way I make pizza if I didn't forget anything.

Ingredients

Dough

  • 1 cup warm water
  • 1 package dry yeast
  • 2 Tablespoon olive oil
  • 1 teaspoon salt
  • bread flour

Sauce

  • 1 can (8 ounces) Tomato Sauce
  • 1/4 teaspoon minced Garlic
  • 1 teaspoons dried oregano leaves
  • 3/4 teaspoons salt
  • 1/8 teaspoon Pepper

Directions

Select a large mixing bowl

I use a stainless steel bowl about 2 quart

Put the warm water in the mixing bowl

It should be the temperature of a baby's bottle about 98° F.

Add the yeast

Let the yeast rehydrate for 5 to 15 minutes

Add the olive oil and salt

Slowly add bread flour while stirring with a wooden spoon

When the dough becomes to thick to stir with the spoon work it with your hands

Continue adding flour until the dough starts removing itself from your hands

Turn the dough unto a clean solid working surface and knead

Add flour to the surface until the dough doesn't stick

Knead for about 10 minutes

Shape dough into a ball

Place it in a large lightly greased bowl

Turn dough over so the grease will be on top (this prevents the air from drying the dough)

Cover with a damp cloth

Let rise in a warm place until doubled in bulk about 45-60 minutes

To form the pizza first knock down the dough down, an odd expression, by punching it

Then gather the dough by rolling it between your hand and the work surface

Once the dough is gathered it is then shaped by rolling or poking with your fingers or with the heels of your hand or a combination of these

I spread my dough over the entire surface of a cookie sheet leaving only a small raised edge to hold in the sauce

Rub about a tablespoon of olive oil over dough surface and top with your favorite filling

Bake for 15-20 minutes at 500'F or until crust is crisp and brown

I like to top this with onions, green pepper, sausage, black olives, mushrooms and cheese.
